Quinoa n’ Flower Fritters
Servings: 6 Serving Size: 3 Fitters
½ cup quinoa, uncooked
1 tsp. NutriFit Mediterranean Salt Free Spice Blend
¼ cup mozzarella cheese, grated
1/3 cup fat free egg substitute
3 tbsp. rice flour
1 tsp. extra virgin olive oil
¼ tsp. sea salt
2 cups cauliflower, chopped
2 tbsp. parmesan cheese
1. Rinse the quinoa thoroughly in a colander several times.
2. Heat a nonstick skillet, toast the quinoa until it begins to pop, stirring constantly. Add 1 cup of water and salt and bring to a boil. Cover, reduce heat to medium-low, and simmer 10 minutes, or until water is absorbed. Cool.
3. Steam cauliflower in microwave until tender. Drain, and coarsely chop.
4. Preheat oven to 450F. Put a baking pan in the oven to heat it.
Mix quinoa, cauliflower, cheeses, egg substitute, ground rice and seasoning in a large bowl. Shape into 3″ patties. Arrange patties on prepared baking sheet and bake until golden brown, about 20 minutes, turning once.
