This week, it’s all about how to stay healthy while traveling. Whether you’re on the road or in the air, going for business or for pleasure, traveling can be a stressful time and take a toll on one’s health as well as mental and physical well-being. Jackie shares her best tips for staying healthy and avoiding unwanted weight gain.
This week’s guest is Beth Pratt, the California Director for the National Wildlife Federation, who has worked in environmental leadership roles for over twenty years, and in two of the country’s largest national parks: Yosemite and Yellowstone. Beth spends about 60% of her working life on the road and knows full well the challenges this much traveling takes on health and the body. She and Jackie will discuss the nature of her work for the National Wildlife Federation, her favorite charities and Weigh in for a Cause – a new way you can lose weight while raising money for your favorite charity!
This week’s recipe is for delicious and healthy Quinoa n’ Flower Fritters! This simple recipe is loaded with nutrional benefits thanks to our hero ingredient, quinoa! Quinoa is a gluten free, high protein grain that’s very versatile, easy to cook and lends itself to a variety of treatments. Jackie’s recipe then combines the quinoa with high fiber, super nutritious cauliflower, egg white, rice flour (also gluten free) and part skim Mozzarella cheese.
Quinoa n’ Flower Fritters
Servings: 6 Serving Size: 3 Fitters
½ cup quinoa, uncooked
1 tsp. NutriFit Mediterranean Salt Free Spice Blend
¼ cup mozzarella cheese, grated
1/3 cup fat free egg substitute
3 tbsp. rice flour
1 tsp. extra virgin olive oil
¼ tsp. sea salt
2 cups cauliflower, chopped
2 tbsp. parmesan cheese
1. Rinse the quinoa thoroughly in a colander several times.
2. Heat a nonstick skillet, toast the quinoa until it begins to pop, stirring constantly. Add 1 cup of water and salt and bring to a boil. Cover, reduce heat to medium-low, and simmer 10 minutes, or until water is absorbed. Cool.
3. Steam cauliflower in microwave until tender. Drain, and coarsely chop.
4. Preheat oven to 450F. Put a baking pan in the oven to heat it.
Mix quinoa, cauliflower, cheeses, egg substitute, ground rice and seasoning in a large bowl. Shape into 3″ patties. Arrange patties on prepared baking sheet and bake until golden brown, about 20 minutes, turning once.

Beth Pratt, the California Director for the National Wildlife Federation, has worked in environmental leadership roles for over twenty years, and in two of the country’s largest national parks: Yosemite and Yellowstone. Before joining NWF, she worked on sustainability and climate change programs for Xanterra Parks & Resorts in Yellowstone as its Director of Environmental Affairs. Prior to her role in Yellowstone, for nine years Ms. Pratt served as the Vice President/CFO for the non-profit Yosemite Association in Yosemite National Park.
In 2007, she traveled to Japan as part of a month-long Rotary International Professional Exchange to study business, sustainability, and national park operations. She is also a member of the Association of Partners for Public Lands Training Corps, serves on the advisory committee of the non-profit Save the Frogs and the education committee for Felidae Conservation Fund. In 2012, she was selected to train with Vice President Al Gore as part of the Climate Reality Project Leadership Corps. Her work has been featured in CNN, the Christian Science Monitor, Sustainable Industries, Fast Company, Sierra Magazine, Green Lodging News, KQED, and the Peter Greenberg Radio Show. She is also the author of the upcoming book, When Mountain Lions are Neighbors: Wildlife in Today’s California.
Ms. Pratt graduated from the University of Massachusetts at Boston with bachelor’s degrees in management and biological anthropology, and a minor in marketing. She also obtained a master’s in business administration from Regis University in Denver. In 2009 she earned the U.S. Green Building Council’s LEED Accredited Professional credential. Under her leadership, Yellowstone’s environmental programs received environmental achievement awards from the National Park Service three years in a row, from 2009-2011.
