John Volturo of Scriball talks living with Celiac’s Disease on Food Exposed
This week, Jackie clears up the confusion around the gluten-free craze that’s been all over the media. She’ll tell you why you have gluten on your plate and what other foods you can eliminate to improve your diet. You’ll also learn what gluten-intolerance is and what Celiac Disease is and what its symptoms are.
Jackie’s guest this week is former senior vice president of marketing for Guthy-Renker and founder of Scriball – an interactive platform that connects brands with consumers. He’s also the father of two twin daughters and has recently been diagnosed with Celiac disease! He’ll talk about how Celiac affects his diet and how people with similar health challenges can navigate through the noise to find a diet that works for them.
Get ready to put veggies on your plate! This week’s recipe is Super Foods Veggie Delight – a dish that’s not only unbelievably delicious, but also unbelievably healthy! High in folate, Vitamins A,B and C this is sure to be a family favorite – even among the pickiest eaters!
Super Foods Veggie Delight
Servings: 3 Serving Size: 1 ½ cups
Ingredients:
1cupquinoa, uncooked
1cupcollard greens, chopped
¼cupblack lentils
1/3cupred bell pepper, finely chopped
¼cuponion, finely minced
1tbsp.extra virgin olive oil
2tbsp.roasted soy nuts
1tsp.NutriFit Lemon Garden Salt Free Spice Blend
2 ½cupsvegetable broth
Directions:
1. Rinse the quinoa in a colander three times until the water runs clear. Drain well.
2. Heat a nonstick saucepan over medium heat. Add the olive oil, onions, and bell pepper and saute for 2-5 minutes, or until onion is translucent. Add the quinoa to the pan and saute for 5 minutes, until the grains are coated and lightly toasted.
3. Add the broth to the pan with the lentils, collards and seasoning; bring to a boil, reduce heat, cover and coook until liquid is absorbed and quinoa is cooked.
4. Sprinkle the soy nuts over the top before serving.
