Peer Health Exchange L.A. Executive Director Amita Swadhin on Food Exposed with Jackie Keller

With 43% of the world’s population under the age of 25, teen and young adult health is an incredibly important issue that is often difficult to discuss! This week, Jackie shares some startling statistics concerning overall teen health and discusses how to help teenagers make healthy, impactful decisions!

Jackie’s guest this week is Amita Swadhin, the Los Angeles Executive Director of Peer Health Exchange, a national non-profit organization dedicated to empowering teens to make healthy decisions. Amita shares the secrets to success behind the PHE program as well as how she overcomes the obstacles and challenges she has faced when talking to teens about nutrition and health.

This week’s recipe is for delicious and healthy Nutrific Burritos! Featuring ingredients that are inexpensive and can be found in any grocery store, this meal is quick easy and a favorite meal for people of any age!

Nutrific Burrito (1 serving)

Serving size 1 burrito)

4 oz lean ground turkey meat
¼ cup reduced fat mexican cheese
2 tbsp enchilada sauce
1 tsp NutriFit Calypso Spice Blend
1 cup romaine lettuce, shredded
¼ cup tomato, diced
1 med sprouted grain tortillas

1.  In a nonstick skillet, saute the ground turkey with the Calypso blend until the meat is crumbly.  Add 1 tbsp of the enchilada sauce, plus 1/4 cup of water and cook 15 minutes or until the meat is soft.

2.  Wrap the tortilla in a paper towel and heat it in a microwave oven for 20 seconds.  Mound the meat mixture in the center of the burrito, top it with the cheese, lettuce and tomato.

3.  Fold the burrito, tucking the sides in first and heat it, covered, in a microwave oven for 1 minute or until desired temperature is reached.  Do not overheat.

Meet Jackie (Creator, Host): Jackie Keller is the Founding Director of NutriFit, LLC, Los Angeles’ premiere healthy food company. Since 1987, Jackie has dedicated her life to helping others live longer and healthier lives.

 

Meet Amita (Guest): Amita Swadhin is the Los Angeles Executive Director of Peer Health Exchange, a national nonprofit that empowers teens to make healthy decisions. They do this by training college student volunteers to teach a comprehensive health curriculum in public high schools that lack health education and in which a majority of students come from low-income households. Prior to joining Peer Health Exchange in May 2012, Amita served as the Coordinator and a cast member of Secret Survivors, a theater project she conceived of in 2009 for the NYC-based off-off Broadway Ping Chong & Co. featuring survivors of child sexual abuse telling their stories. She previously held positions in New York City nonprofits and public institutions, including Kingsborough Community College (CUNY), Make the Road NY, Global Kids and Legal Momentum, served as the Board Chair of the National Youth Advocacy Coalition, and served as a consultant to a number of foundations, nonprofits and schools. Amita is the co-host of Flip the Script, a weekly radio show on KPFK-LA, a member of the Peace Over Violence Child Sexual Abuse Prevention Advisory Council, a member of the Liberty Hill Foundation’s OUT Fund, and is a poet and essayist. Her work has been published in anthologies including Dear Sister: Letters from Survivors of Sexual Violence (AK Press, 2014) and the forthcoming Queering Sexual Violence: Radical Voices from Within the Anti-Sexual Violence Movement (Magnus Books). She holds a B.S. in Foreign Service from Georgetown University and an M.P.A. from the NYU Wagner School, where she was a Reynolds Fellow in Social Entrepreneurship.
